This recipe is based on one from Zarela Martinez’s amazing cookbook Zarela’s Veracruz. I like to buy a whole duck, use the breasts and fat for this dish, and keep the legs for confit and the body for stock. It’s great value, as well as being a treat, and you can freeze the pieces you don’t want to cook immediately. Otherwise, just buy the duck breasts and serve with hot steamed rice and a happy grin. The combination of duck, tequila and spicy tomato sauce is guaranteed to please!
